In 2011, Sherif Badawy, a pediatrician and avid marathon runner, moved from Egypt to the United States. While he quickly adapted to his new life, there was one thing that he missed dearly: quality baklava. What he found on store shelves was a far cry from the baklava he grew up loving—bulky pieces with too much dough, barely any nuts, and drenched in syrup. As someone with a sweet tooth and a commitment to health, Sherif knew baklava could be better, both in flavor and in nutrition.
Determined to create a baklava that was both delicious and healthier, Sherif spent years researching, sampling, and refining his vision. His journey took him around the world, from tasting baklava in local bakeries to working with master baklava makers in Jordan, where he found the perfect inspiration: baklava that was packed with premium nuts, minimally sweetened, and portioned for guilt-free indulgence.
