Windy City Mushroom - Fungitarian

Fungitarian was developed to get kids and parents to eat more healthy mushrooms without having to learn to cook them first. We developed five flavors that are familiar to the American flavor palette to make the switch easier for picky eaters.

We started two years ago listening to customers at farmers markets who didn't know how to cook mushrooms, or who were busy parents who wanted easy to prepare options on school nights.

We developed flavors and sold them in vacuum sealed pouches at farmer's markets alongside our fresh mushrooms. Weeks later when we sold out of packages with hand written labels, we knew were on to something!

Over the next year we refined the five flavors and officially launched in July of 2023. We sold these at our expanded farmer's markets, and into small grocery stores and co-ops where we also sold out during demos.

We launched Fungitarian into 7 Fresh Thyme stores in January of 2024 where it has already risen to Instacart's top seller! We're also currently expanding into two Dom's Fresh Market locations, and 22 Pete's Fresh grocery stores.

We are currently developing other products that use Lion's Mane mushrooms including "Lion's Nuggets", and "Brain Burgers"!
