Nearly a decade ago, winemakers Carla and Richard Betts fell in love with the aroma and taste of a rare Italian dried pepper.
In 2020, they set out from their home in Amsterdam and journeyed across the Alps. Taking the sage advice of their contemporaries in the food world, they stopped in Austria for a meal prepared by acclaimed chefs, Ethel Hoon and Jakob Zeller of Restaurant Klösterle.
Together they decided they would embark on this journey together, to utilize this heirloom varietal of pepper, creating by-hand in the Italian Alps, with the intent of being versatile and approachable to elevate any and all cuisine Stuzzi comes into contact with.
