I've always been somewhat of a nerd when it comes to research. This passion for knowledge has led me down some interesting paths. In 2008, I was diagnosed with a genetic heart condition called Hypertrophic Obstructive Cardiomyopathy. My research led me to have open heart surgery at the Cleveland Clinic with their world-renowned surgeon. After a short recovery, I pursued and completed my doctorate in Curriculum and Instruction. I then developed and implemented a social and emotional learning program for schools. But, suddenly the Pandemic shuttered schools in 2020, and I found I had more time at home to pursue my love of baking. I have always had a passion for making desserts. The sweet tooth gene seems to have been passed down, as my mother and grandmother were bakers of all things sweet. I even recall pulling my little red wagon down the sidewalk as a little girl, peddling mangoes from a neighbor's tree so that I could raise enough cash to buy candy for my friends and me. Even though my heart surgery was successful, I discovered that a whole-food, plant-based diet alleviated many of my symptoms from this incurable disease. I had been dairy-free for several years. However, I was still using eggs in my baked goods--until my soon-to-be five-year-old granddaughter requested that I make her birthday cake without eggs so that her little sister and mom could enjoy her cake. This was the defining moment of my baking career: Only Vegan bakes from now on! Using my lifelong research experience, passion for baking, and curated Vegan, gluten-free, ethical, and all-natural ingredients, I have created products everyone can indulge in and satisfy sweet tooth cravings without compromising the rich, delicious flavors.
We officially launched KC Sunshine's Cookies in late 2023, after several years of developing formulas for our allergen-friendly, "clean," and gourmet cookie line.
