Sammontana's journey began in 1946 in Empoli, when Romeo Bagnoli - a father of six - purchased the local Sammontana latteria, named after the farm that supplied its milk. His eldest son, Renzo, soon transformed it into a cafe and gelateria, marking the beginning of Sammontana's gelato story.
