I am a 20 year High School Science Teacher and went to school for Sustainability and Environmental Sciences. I also grew up in the restaurant industry. When I realized that there were no USDA organic Mushroom farms in my state of NJ, I started Two River Mushroom back in 2018. I started out of a friends barn, outgrew that space and moved to growing out of shipping containers onsite at a restaurant in Long Branch, NJ. We again quickly outgrew that space and then purchased a 25 acre parcel of Farmland preserve in Historic Millstone NJ.
We now supply about 100 of the Tri-State Areas Finest Restaurants and 100 Retail locations along with many farmers markets and CSA's. A few years ago, I started on the journey of crafting a Value Added Broth Line. I saw Functional Mushrooms growing and finding their way into Coffee Brands (Four Sigmatic, Ryze, Mudwater etc.) Chocolates, Drinks and the Wellness/Fitness Space.
I wanted to solve the problem of delivering the functional mushrooms into a space that did not (and still does not) exist...….Incorporating into Premium Family of Broths. 3 years ago, I started working with Rutgers Food Innovation Lab. Then onto UNCFIL. Developed a commercial Formula and onboarded with a Co_manufacture that unfortunately went out of business in an overnight fashion. I Lost tens of thousands of dollars but pivoted and onboarded with the Nations Largest Tetra Recart. Our SoFi Gold award winning broth is now on track to become a staple in all big retail nationwide.
